Barbecue Beef Sandwiches

I love a good meal that takes no time to prepare.  But then again who doesn't?!?  Sometimes the middle of the week gets so busy that it is nice to have a great fix it and forget it type meal.  These beef sandwiches are so simple and so good.  I served ours with Creamy Dill Potato Salad and it was the perfect mid-week meal!




Barbecue Beef Sandwiches
3-4 lbs beef roast (I used an arm roast because it was on sale), season with salt and pepper
1/2 tsp sea salt
1 TBS minced garlic
14 oz beef broth
1 cup ketchup
1/2 cup packed brown sugar
1/2 cup lemon juice
3 TBS steak sauce
1 tsp black pepper
1 TBS worcestershire sauce

  • Brown seasoned roast on all side
  • In a small bowl mix together all the remaining ingredients
  • Pour half of the mixture in the crock pot
  • Place beef in crock pot and pour remaining sauce over beef
  • Cook low 8-10 hours
  • Remove beef from slow cooker and shred
  • Place beef back in slow cooker and mix with juices
  • Serve on buns and ENJOY!
This is one of those recipes that takes little effort and the beef just melts in your mouth.  It's so simple and filling.  It's a great recipe that uses ingredients that most people already have on hand.  I don't know about you, but I love when there are minimal items I have to add to my grocery cart :)
