Baked Sweet and Sour Chicken and Fried Rice

Sweet and Sour Chicken is a favorite for everyone in my house.  Anytime we get Chinese this is guaranteed to be ordered.  I found these recipes HERE and knew we had to try it!  I made extra white rice when we had Beef and Broccoli the other night because I knew I wanted to make the fried rice as well .  I am love the ease and simplicity of this entire meal. 



Baked Sweet and Sour Chicken
4 Boneless Skinless Chicken Breasts, washed and cubed
Salt & Pepper
1 Cup Cornstarch
2 Eggs, beaten
1/4 Cup Vegetable Oil
3/4 Cup Sugar
1/4 Cup Ketchup
1/2 Cup Vinegar
1 TBS Soy Sauce
1 tsp Garlic Salt
  1. Preheat oven to 325 degrees
  2. Season chicken with salt and pepper to taste and then dip in cornstarch to coat and then dip in eggs
  3. Heat oil in a skillet and then cook the chicken until browned, but not cooked
  4. Place chicken in a greased 9x13 baking dish
  5. Mix sugar, kethcup, vinegar, soy sauce, and garlic salt in a small bowl
  6. Pour sauce evenly over chicken
  7. Bake 1 hour, turning every 15 minutes
Fried Rice
3 Cups Cooked White Rice
3 TBS Sesame Oil
1 Cup Frozen mixed veggies, thawed
2 Green Onions Chopped
2 tsp Minced Garlic
2 Eggs, slightly beaten
about 1/4 Cup Soy Sauce (I added a couple more TBS after)
  1. Heat oil in a large skillet or wok over medium-high heat
  2. Add mixed veggies, onion, and garlic to the oil and stir fry until tender
  3. Lower the heat to medium-low, push the mixture to one side, pour the eggs on the empty side and stir fry until scrambled
  4. Add the rice and soy sauce and blend together well
  5. Stir fry until thoroughly heated
Now wasn't that easy!?!  What a great meal to the bring the family together with.  Everyone loves take out and this is a great way to make your own take out.  Super easy and fun not to mention delicious!

There weren't any leftovers at all.  The whole meal was incredible!  The sweet and sour chicken was different than take out, but it was really good.  The fried rice was super easy and delish!  Both are definitely added to the favorite recipe slot.  The next time I make this I will add some onion, green pepper, and pineapple and double the sauce.  Although I am thinking I might need to double the recipe altogether.  If you love sweet and sour chicken and fried rice you must try these recipes!  They are AMAZING!
